Lentil Tebouli Salad

Ingredients:

  • 150g lentil/quinoa mix
  • 30g minced red onion
  • 8g sliced baby cucumber
  • 40g grape tomatoes cut in half
  • 25g lemon juice
  • 15g olive oil
  • 2g salt
  • 1g pepper
  • 10g chopped parsley
  • 5g chopped mint
  • 15g basil chiffonade
  • 10g chopped olives of choice
  • 40g diced red pepper
  • .5g toasted cumin
  • 5g shaved radish

Method: Combine all ingredients and mix well.

Chickpea Puree

Ingredients:

  • 800g chickpeas
  • 180 g water
  • 90g olive oil
  • 20g salt
  • 50g lemon juice
  • 75g white vinegar
  • 20g garlic
  • 5g lemon zest

Method: Combine ingredients in a blender and blend on high until silky smooth, around 5-10 minutes. Add to salad bowl.
